How to Keep Fish Fresh


  1. Go straight home from the market; if you can't, ask for a small plastic bag of ice to pack beside the fish.
  2. Pour off any liquid around the fish; it can sour.
  3. Store the fish in the butcher paper or plastic bag or tray it came in, in the coldest part of your refrigerator.
  4. Use within two days; sooner is better.
